- 1/2 head cabbage (shredded or thinly sliced)
- 1/4 red onion (very finely sliced)
- 1/4 cup herbs (tender, your choosing, optional cilantro, basil, parsley, chives)
- 1/4 cup olive oil
- 2 lemons (or limes – try roasting them first, see notes!)
- 2 garlic cloves (finely minced, use a garlic press)

- pepper flakes
- seeds (Optional, for sprinkling – hemp, sunflower, pumpkin seeds)

I use chines cabbage and red cabbage (raw kale unmassaged is not nice!) tasty with the lemon and lots of fresh parsley. Served it with hemp crusted tofu.

I made this in the past but mistakingly went overboard with salt. Nevertheless, colorful, healthy.
