- 3 1/2 cups chicken (or vegetable stock)
- 1 Tbsp. butter (ghee, and/or olive oil)
- 1 onion (large, 1 1/2 cups, finely diced)
- 5 cloves garlic (minced)
- 1 Tbsp. ginger (freshly grated)
- sea salt
- freshly ground black pepper
- 3 Tbsp. spice blend (berbere)
- 1 Tbsp. sweet paprika
- 1/2 cup white wine
- cilantro (for serving)
- greek yogurt (for serving, I added a little saffron water to the yogurt to give it that yellow color)

This has become a favorite! Easy, nutritious, the Ethiopian spice is hot especially with the ginger… I like it!!
Added some carrots to add a bit of sweet to offset the fact that I add too much spice cuz, it sooo good!!

It was excellent! I paired it with rice and used sour cream instead of yogurt. I used fresh cilantro over the lentils and tomato sauce instead of crushed tomatoes. This is a completely flexible recipe!
