- 1 pinch ground cinnamon
- 1 tsp. smoked paprika

- 3 Tbsp. unsalted butter (or ghee, see notes)
- 1 cup onion (chopped fine, 1 medium)
- 1 Tbsp. minced garlic (3 cloves)
- 1 Tbsp. minced ginger (1-inch ginger grated or minced)
- 1 Tbsp. tomato paste (or 1 roma tomato pureed)
- 1 tsp. salt (; if using Berbere, adjust salt based on spice blend contents)
- 2 Tbsp. seasoning (berbere, reduce to 1 tablespoon for mild)
- 1 cup red lentils (rinsed 2-3 times)
- 2 1/2 cups water (adjust consistency after cooking, see notes)

This turned out good the first time but I couldn’t really taste the butter, so the second time, I replaced the butter with coconut oil...it tasted even better and is healthier! I also used veggie broth instead of water and let it simmer on low heat for a long time (45 minutes to an hour) which really enhanced the flavour. Delicious wot. (Stovetop method)
