I make this all the time. We love it. I serve it hot though. I mix everything in a skillet after I char the corn and a jalapeño. Then I add about a quarter cup of half and half with more cojita and heat it through. Yum!

There’s enough herb & spice action going on here that you can get away with using frozen corn. Savory, rich (but not too rich) and delicious.
