These esquites are exquisite! Esquites are a traditional warm Mexican corn-based snack served in a cup. Similar to the popular Mexican street food known as elotes (corn on the cob with cream, spices, and cheese), esquites combine the same flavors to make an easier-to-eat version without the cob. This version gives the recipe a makeover — just like Chef Gordon Ramsay does to the many restaurants in Gordon Ramsay's 24 Hours to Hell and Back.

Ingredients

  • 2 cups corn kernels (fresh or frozen)
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1/4 cup green onion (diced small, plus more for garnish)
  • 1 teaspoon lime
  • 1 tablespoon cilantro (chopped)
  • 1 tablespoon mayonnaise
  • 1/4 cup queso fresco

    Directions

    1. Melt the butter in a sauté pan over medium heat. Add in the corn, salt, pepper and chili powder and sauté for 3 minutes or until the corn is tender.
    2. Add in the green onion and lime and cook for 1 minute more while stirring.
    3. Remove the pan from the heat and add in the mayonnaise and cilantro. Taste and season with more salt and pepper if desired.
    4. Plate the corn in a bowl and top with the queso fresco and more green onions and serve warm.
