  • 2 Tbsp. green peppers (diced)
  • 3 Tbsp. diced onion (about 1/4 medium onion yields 3 Tbsp.)
  • 1/2 cup diced celery
  • 1 cup crackers (unsalted common, crushed)
  • 1 cup sharp white cheddar cheese (cut fine)
  • 1/4 tsp. paprika
  • 1/2 tsp. salt
  • 1/4 cup butter (melted)

    This was waaay too good! No one's going to eat just one serving. I used Carr's Table Water Crackers as a substitute for the difficult-to-find Common Crackers, and it was delicious. Also, although the recipe writer strongly recommend fresh in-season tomatoes, I found it perfectly delicious even with out of season on the vine tomatoes (cause it's late November, I wasn't going to wait almost a year to try the recipe). Although I'm sure it's fantastic with in-season tomatoes, don't let that deter you from trying this recipe just cause it's the wrong time of year.
