- 3 cups tomatoes (diced, deseeded, about 3 medium per cup)
- 2 Tbsp. green peppers (diced)
- 3 Tbsp. diced onion (about 1/4 medium onion yields 3 Tbsp.)
- 1/2 cup diced celery
- 1 cup crackers (unsalted common, crushed)
- 1 cup sharp white cheddar cheese (cut fine)
- 1/4 tsp. paprika
- 1/2 tsp. salt
- 1/4 cup butter (melted)

Directions
- Mix all ingredients together in a large bowl.
- Turn the mixture into a buttered casserole dish and bake at 350° for 20-25 minutes, until bubbling around the edges.

This was a great way to use up some excess tomatoes that I had laying around. It was tasty, but I probably would not make it again unless I had a large quantity of tomatoes again. I used unsalted Saltines. I also cooked it at 400 degrees because I wanted the veggies to be cooked. They were still pretty crunchy, but serviceable.

This was waaay too good! No one's going to eat just one serving. I used Carr's Table Water Crackers as a substitute for the difficult-to-find Common Crackers, and it was delicious. Also, although the recipe writer strongly recommend fresh in-season tomatoes, I found it perfectly delicious even with out of season on the vine tomatoes (cause it's late November, I wasn't going to wait almost a year to try the recipe). Although I'm sure it's fantastic with in-season tomatoes, don't let that deter you from trying this recipe just cause it's the wrong time of year.
