- 1 1/2 cups all purpose gluten free flour blend (I used Better Batter)
- 3/4 tsp. xanthan gum (omit if your blend already contains it)
- 6 Tbsp. cornstarch
- 1 tsp. baking soda
- 1 1/2 tsp. baking powder
- 1/2 tsp. kosher salt
- 2 tsp. ground cinnamon
- 3/4 cup granulated sugar
- 1/2 cup light brown sugar (packed)
- 3 cups carrots (peeled and grated)
- 3/4 cup raisins (use the good ones, like Thompson, if you can)
- 1/2 cup vegetable oil
- 4 eggs (240 g, weighed out of shell at room temperature, beaten)
- 1/2 cup crushed pineapple (canned, in its own juice, heavy on the juice)
- 8 oz. cream cheese (at room temperature)
- 6 Tbsp. unsalted butter (at room temperature)
- 1/4 tsp. kosher salt
- 2 Tbsp. light corn syrup (optional)
- 3 1/2 cups confectioners' sugar (345 g to 403 g)
