- 2 Tbsp. olive oil
- 2 cups rotisserie chicken (pulled)
- 1 yellow onion (large, chopped)
- 1 red bell pepper (large, chopped)
- 1 green pepper (large, chopped, I've been using roasted Hatch peppers since they are in season - so good!)
- 4 large garlic cloves (minced)
- 1 tsp. jalapeno pepper (minced fresh)
- 1 zucchini (chopped into 1/2" pieces)
- 1 yellow squash (chopped into 1/2" pieces)
- pepper
- salt
- 3 Tbsp. cumin
- 1 Tbsp. chili powder
- 1 Tbsp. smoked paprika (sweet)
- 1 can black beans (rinsed & drained)
- 14.5 oz. diced fire roasted tomatoes (2 cans, do not drain)
- 12 oz. beer (or chicken broth, I used a full beer plus a few cups or so of chicken broth until I reached my desired consistency)
- 1 lime (juice and zest)
- 1 cup chopped fresh herbs (your choice, I used 1/3 cup cilantro, 1/3 cup dill, 1/3 cup basil)
- avocado

- cheese
- corn kernels (cut from 4 large ears of fresh sweet corn (if I'm feeling lazy I will use Trader Joes roasted frozen corn)

Such an easy way to use up garden ingredients. I made mine more vegetarian friendly by substituting out the chicken with baby bella mushrooms like was suggested. I’m still curious how it would’ve turned out with using beer but I chickened out and used vegetable broth. Still delicious and satisfying! Perfect for the end of the summer.
