- 1/2 tsp. pepper
- 1 Tbsp. olive oil
- 1 medium onion (diced)
- 1 red bell pepper (diced)
- 1 cup frozen corn kernels
- 1 poblano chile (large, diced, optional)
- 2 cloves garlic (minced)
- 1/4 cup all purpose flour
- 2 tsp. ground cumin
- 1 tsp. ground coriander
- 1 1/2 Tbsp. chile powder (optional)
- 2 1/2 cups low sodium chicken broth
- 8 corn tortillas (yellow or white, each cut into four triangles)
- 1 1/2 cups shredded cheddar cheese (or Mexican chess blend, note: you can add more if you like it cheesier, but be sure to adjust your container counts if you’re following the 21 Day Fix!)
