Description

This recipe demonstrates how making a simple sauce can make a big difference to the outcome of a meal. Emperor fish, or red snapper as it is more commonly known, is a firm-fleshed white fish that takes well to pan-searing, as here. You could serve it with a lemon wedge for squeezing, but it's even better with a two-ingredient sauce is made by boiling honey and balsamic vinegar until reduced to a thick syrup.

  • 300 milliliters balsamic vinegar
  • 90 grams honey
  • 1 fish fillet (emperor or red snapper)
  • 1 garlic clove (peeled and minced)
  • fresh parsley (minced)

    Directions

    1. In a pot, heat the vinegar and honey on medium heat for 20 minutes, stirring constantly. Set aside.
    2. Season the fish fillet, add the garlic and a pinch of parsley and salt. Pan sear the fish fillet for 3 minutes on all sides.
    3. Plate and drizzle the vinegar reduction on top.
