- 1/4 cup ketchup
- 1/4 cup tomato juice
- 1 tsp. salt
- 1 tsp. pepper
- 1 Tbsp. olive oil
- 2 cups veal stock

- In a skillet, heat the oil on medium high heat.
- Sweat the onions, celery and carrots for 5 minutes.
