My mouth is WATERING! I didn’t break the yolk soon enough for it to flow all over, but it was still phenomenal. I even burnt the top of my mouth a little because I tried to eat it too quickly!

Really flavorful! I did a version that was called from a variety of peoples recipes-chose to use fire roasted diced tomatoes since I found them at Trader Joe’s. Glad I did not have the pepper flakes as they I had a bit of green pepper in them already. Always figured people can add extra heat at the table! I did not do the spinach first-I put it in the pan once the sauce was cooked and let it wilt before storing it in and then adding the eggs. We enjoyed it with pieces of flat bread as I did not have the rosemary and olive oil bread that I wanted to serve with it. Everybody loved it!
