- 1/2 tsp. ground black pepper (freshly)
- 8 oz. fresh mozzarella (cut into 1/8-in slices, about 14 slices)
- 3 cloves garlic (peeled and finely chopped)
- 3 tomatoes (ripe, 1 1/4 lbs, each cut into 6 to 8 pieces)
- 1/4 cup virgin olive oil
- 2 Tbsp. red wine vinegar
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper (freshly)
- 1/4 tsp. Tabasco Sauce

Superb idea and a wee modification produced great flavours, textures and is a Keeper Recipe that the whole family loves: I cooked the terrine @ 160c for 10-15mins with the following layers: Base layer: (Becomes the Terrine Top): Eggplant slices, +1 Tbsp of Olive Oil (Lemon or Chilli). 2nd Layer: Slices of Mozzarella Cheese. 3rd: Slices - Tomato & Grilled Peppers with sliced Kalamata Olives. 4th: Shredded Basil leaves, Salt & Pepper seasoning. 5th: Eggplant slices. 6th: One Brie, cut in half, ie 2 pieces or circles of Brie spread across the dish (which oozes out when heated). 7th: Mixed Fire Roasted Peppers and Tomato slices. 8th: Curly Parsley (not Flat Parsley), Salt & Pepper seasoning. Top and final layer: Eggplant slices.
