- 3 cups water
- 1 cinnamon stick (small, 1 inch)
- 12 curry leaves
- 2 pieces pandan leaves (2 inches long)
- 2 tsp. black mustard seeds
- 2 tsp. cumin seeds
- red chili flakes (to taste)
- 1 Tbsp. fresh ginger (grated)
- 1 Tbsp. garlic (grated fresh)
- 1 red bell pepper (diced)
- 3 green chilies (chopped)
- 1 tomato (large, diced)
- 2 tsp. curry powder (I used McCormick brand)
- 2 cups unsweetened coconut milk (1 cup for less gravy, 2 cups if you want more gravy)

This is stupid good!!! Warm, spicy, satisfying!!! I made to go over cornbread vs rice this time , but both would be so good. I tend to not measure, so maybe Im a little heavy on spices because I estimate, but you honestly can’t go wrong

Very Yummly!! I used fresh coconut meet blended with a little water instead of store bought coconut milk and it worked our really well. Love the mix of flavors. Recipe has clear and easy to follow directions. Yum!
