Wow, who would've thought eggplant could be this good, not made into eggplant parmesan?!! Served with a side of chicken sausage and a salad, I felt like I was eating a Thanksgiving dinner. Interesting combo of ingredients (I used 1c. mushrooms instead) and swiss on top sealed the deal. We used small eggplants so it just served 2. Couldn't resist eatng my "whole" 1/2!

Have made this 3 times, my husband and I love it more every time!!! Its such a,great meal on a chilly evening!
