With a little adjustment, this recipe brought me to a delicious dinner. Rather than bake the eggplant slices, I breaded them lightly, and sautéed them to get them pliable. I had taken the two side ends earlier, and cut them into cubes, softening them with garlic, immersion blended them, and added it to the filling mixture. Thank you! Great recipe! I like the cheese topping a little bit more browned.

Delicious! The lemon makes it. We aren’t big eggplant eaters but someone gave us some from their garden. We’d definitely make it again.

Loved it! I had some mushrooms I have to use up so I diced them up in the marinar sauce.

It was excellent and very easy. Only tweak I will make is to cut the lemon zest by half. A keeper!

It was great. I added spinach to the ricotta yum. Next time I will cut the eggplant slices thinner. I also used fresh mozzarella yum. The whole family loved it!

This was very good! My family really enjoyed it. It is a healthier and easier version of a recipe I made before where the eggplant was fried. I did double the filling recipe and used extra sauce. Will definitely make again.
