The first time I made them I cut the eggplant lengthwise. I think I prefer it that way. Either way you cannot go wrong. They are amazing

Would definitely do this again. I added spinach, feta and Italiano seasoning to create a Greek pizza. Tres bien!

Will add extra toppings next time and cut the eggplant a little thicker on an angle
