Been making these forever. Came up with the idea so I could enjoy the taste of pizza without consuming loads of carbs...and I love eggplant. Kids absolutely LOVED making these when they were little because I let them top them with anything they wanted. They called them "little pizzas" and gobbled them down with gusto. They are every bit as satisfying as crust pizza. Plus, you can try different toppings on each eggplant round. Absolutely delicious with lots of room for creativity.
