This dish was super easy and so delish! I used basil instead of spinach to give it more "Italian" flair. It's definitely one of my favorite ways to have eggplant now.

This turned out fabulous! I substituted fresh basil leaves for the spinach and added a little Italian seasoning. Love the heat the red pepper flakes add. Nice to have an additional easy, healthy meal to add to our dinner options.

Very easy recipe. Came out great. Texture of eggplant was great not mushy. I added some Italian seasoning.

this was a great, quick and easy recipe. Great waynto use the over abundance of eggplant i have in the garden!

Pretty good! Flavorful and moist. I chopped a tiny bit of parsley and garlic into the tomato sauce and I recommend it. Can’t wait to experiment with other toppings!

Great, tried it but decided to add crumbled sausage and made it tastier. Delicious and will make again with sausage. Became a complete meal in one.

This recipe gives a snack with tasty pizza flavours. I tried a few other slices too with mushroom, onion, blue cheese etc. The aubergine didn't became slimy.

Super tasty and definitely flexible! You could easily swap in other toppings and types of cheese but a great low carb and veg meal

Very tasty & easy I would definitely peel the eggplant next time...skin is tough I used diced fresh tomatoes & shredded white cheddar & Parmesan plus basil over pizza sauce

Sooo delicious!!! I added basil instead of spinach, it really made it pop. I made some with salami/pepperoni too. Also, I put the eggplant pizza on buttered and toasted bread for an added crunch.

Boyfriend called it edible, but not his favourite. Thats code for don't make this for me again. Lol! To be fair, he's not a fan of eggplant in general. I found them flavourful and can see the possibilities for different toppings.

It was good! It was my first time cooking with eggplant. I’m not a huge fan of eggplant but I did eat it all.

Modified the toppings to my preference (mushrooms and vegetarian “pepperoni”. Turned out great. Perfect work lunches!

It was delicious! I will definitely make this again. I served this as a side dish with short ribs, corn on the cob and sliced avocado. The plate was gorgeous!

Delicious! Easy to make and cured my pizza craving! Adding Parmesan on top made it just a tad better I think
