Pro: family loved the flavor. I used Rao’s sauce (no added sugar), pre-sliced fresh mozzarella and breaded about half of the eggplant in an Italian seasoned panko before frying (by request).
Con: a ton of prep—5 mins to cut, 30 mins to let slainated pieces give off moisture, 30-35 mins to fry, 45 mins in the oven. The 100+ minute estimate was accurate in my case. I tried to press as much oil as possible out. Wasn’t unacceptably oily in finished product; added some additional depth to sauce.
Bottom line: I’d make it again but only on a very special occasion.

Good except it needs more cheese. I added it for leftovers and then was perfect. I also recommend using the good fresh mozzarella versus the sliced one that I bought from target

Unfortunately this was way too oily I was careful to ensure the oil was very hot but the eggplant still absorbed it all, would not make again

This recipe is excellent. A little time consuming in the preparation, but well worth it. I made it tonight and it was delicious.

This was delicious! I didn’t have fresh mozzarella on hand so just used shredded and it tasted great. I will definitely make this again.

Super easy , worth the time for the dry out stage w eggplant! Have done other recipes wo and difference is amazing! My new go to recipe for eggplant!
