It was quite delicious! 😋
I really liked it but my boyfriend didn't like the eggplant texture.
I agreed with him that it was a bit mushy.
I think roasting the eggplant for 15 mins may have been to long. I'd try the recipe again either reducing or skipping the roasting part. 🤷🏻♀️
