I used marinara sauce and added a little green pepper but otherwise stuck the the receipt. Very good and will make it again.

Did it without basil and instead of red onion put white. And cooked in my oven just for 30 min. But was amazing for me. Tho my boyfriend said that some kick is missing. Next time red onion and basil must be, let’s see his reaction. Thank you

was delicious but maybe leave the eggplants on salt for an hour before cooking. so they are more tender.

great! i added zucchini, chopped red bell pepper, and substituted thyme for basil, and an eggplant from my garden rather than the small eggplants. i also added some canned tomatoes, but i would drain them next time. i would also add noodles to the base next time.

Ok, just finished dinner and I have to say it was delicious! I made a few adjustments to the recipe. #1. Instead of tomato sauce, I used jar marinara sauce. #2. I added black olives. #3. I used regular Eggplant from our garden and not the Chinese version. It cooked just as good! #4. I cooked it for 50 minuets because our oven takes a little longer. Also I used pasta noodles and spooned the casserole over it which turned out to be quite a meal! The ingredients were perfect! Quite happy with how it all tasted!

Awesome; it was easy and delicious. even my husband liked it; he who does not like eggplant .

Turned out as expected. Made a few tweeks of my own, but delicious none the less. Can be used as a side or to top pasta. Enjoy !
