Simple, colorful, quick. Had to season it to my liking but I would definitely do it again.

This is a really good basic recipe that you can alter to your heart’s content. I didn’t have olives, but even with just tomatoes it was good. Instead of salt, I used a little sprinkle of low sodium soy sauce. It’s an impressive side dish but can also be made into a main dish for vegetarian meals.

I made it without olives, but it was delicious anyway. Be careful with the amount of oil though, put as less as you can if you don't like oily food like me.

This is a nice simple eggplant dish. I actually ended up using it for a pasta and it was fantastic!

I make this all the time!! I wanted an eggplant recipe that wasn’t fried. I love the taste. Sometimes instead of baking with salt as the recipe suggests, I sprinkle a bit of feta cheese on top before serving.

This was really tasty! My husband and I really enjoyed it. It was easy too. I may add a little minced garlic next time.

Terrific! I made it as directed, no additions. Delicious. Never made this before, but we love eggplant and wanted to try something new. I will be making this many more times.

Loved this! Added mushrooms and quinoa for a main meal. Filling and delicious!

It was delicious. I didn't have olives or cherry tomatoes but my garden is overflowing with tomatoes and basil so I chopped tomatoes and added fresh basil and garlic to make up for the flavor of the olives. I just mixed it all up in the pan with the eggplant, olive oil and salt and then followed the baking instructions.
I will have to try with olives next time as I'm sure that is good, too.

Really easy dish to make and the final result is really tasty. I'm not a big fan of olives so I left those out but might try them in the future. Ill be making this again.

Absolutely wonderful dish! I had friends over for dinner and wanted something different to serve as a side dish. They all loved it! The sweetness of the eggplant with the tart of the olives is a perfect combination.

Delicious and easy. I like how you only need 3 grocery items and the rest of the ingredients are already in your pantry. This is like the cliff notes version of eggplant caponata but still yummy.
