- 1 cup ham (finely diced, use ham with less than 10% fat for South Beach Diet)
- 2/3 cup low-fat cheese (finely grated, I use Costco Four Cheese Mexican Blend)
- 1/2 green bell pepper (finely diced)
- 2 green onions sliced (thinly, optional, but recommended)
- 12 eggs (beaten well)
- 1 tsp. Spike Seasoning (or use any seasoning blend that is good with eggs)

These egg muffins are under the no salt recipes. Ham and cheese clearly have salt!!!! ?????

Not sure if I simply used too much ham, but 15 eggs made...yup, 15 egg muffins.
For the record, silicone muffin tins wont require any greasing and you still get easy removal.

I used 2 less eggs and mixed in about 1/4 cup of milk instead I also used 3 pieces of bread ripped up on the bottom of the cups to make them more filling very delicious and great grab and go breakfast.

Just made these today. Didn’t have spike seasoning so made my own simple version found on the web. these are really delicious and will be great to,take to work,for breakfast on the go

Maybe I overcooked the muffins. Kept them in for 30 minutes. Hard and on the dry side. They were ok. Maybe they will taste better when I heat them up

Loved it. Prepare it on a Sunday,put in the frig for the week.My husband takes some to work and i keep some for myself..They are delicious.

I was really pleased with this low-carb breakfast option. I used broccoli that I steamed first for a little bit instead of green peppers because my body doesn't tolerate green peppers well anymore...but as the author pointed out, once you get the gist of it, you can pretty much substitute what you like for the veges! Best of all, my meat and potatoes hubby really loved them.
