We made some changes and it turned out delicious! We used Rye bread, with seeds. We used grinder sea salt and black pepper, after flipping we added a chia/flax/hemp seed blend as a light topping and covered with a slice of Swiss cheese and let it finish cooking. Definitely doing again!
