Description

This light and fluffy no butter cake is made with just the egg whites. A slight hint of apple comes through as the cake substitutes applesauce and natural yogurt for butter. Can be made with gluten free flour for those with gluten intolerances.

  • salt
  • 250 grams sugar
  • 1/2 cup olive oil
  • 1 plain yogurt
  • 2 tablespoons applesauce
  • 350 grams flour
  • 1 tablespoon baking powder

    Directions

    1. Preheat oven to 180 degrees Celsius.
    2. Grease a bundt cake pan with margarine, and sprinkle with flour. Set aside.
    3. Beat the egg whites with a pinch of fine salt. Set aside.

    I used organic spelt flour so it didn't rise as much as I hoped but still almost to the top of a bundt ring. Needs something like a cinnamon/brown sugar coating on the top for flavour. I will do that next time. It's a great recipe for using egg whites instead of a boring meringue.
