- 1 tsp. palm sugar (grated, or caster sugar)
- 1/2 tsp. salt
- 100 grams pork (cooked five-spice belly, cut in to 1cm/½in cubes, see above)
- 120 grams rice
- 2 large free range eggs
- 1 tsp. sesame oil
- sea salt (flaked, to taste)
- 300 grams cooked rice (chilled)
- groundnut oil (for frying)
- 60 grams dried shrimp (small, soaked in warm water)
- 1 garlic clove (finely sliced)
- 3/4 tsp. Sichuan peppercorns
- 1 tsp. Chinese five-spice powder
- 60 grams peeled prawns (cooked small, if using frozen defrost and drain well)
- 3 spring onions (sliced at an angle, including green parts)
- ground white pepper (freshly)
- soy sauce (for finishing)
