Giving this dish to someone who doesn't know what’s coming to the table, will wow them! When I served this to my partner, his mind was a little confused. He thought he was eating scrambled eggs! (Due to how well this egg imitation was created!) When I took my first bite, my brain was a little confused too :P But it tasted so nice! :D All different kinds of flavors; creamy, fresh vegetables, bitter greens, salty “eggs”, and I can go on and on explaining this delicious dish…
Ingredients

- 14 oz. extra firm tofu
- 2 cups spinach (packed)
- 1 onion (chopped)
- 3 garlic cloves (minced)
- 2 Tbsp. water
- 2 Tbsp. nutritional yeast
- 1 Tbsp. coconut oil
- 1/2 sweet red pepper (chopped)
- 1/2 tsp. thyme
- 1/2 tsp. rosemary
- 1/2 tsp. marjoram
- 1/2 tsp. red pepper flakes
- 1/2 tsp. paprika
- 1/2 tsp. turmeric
- salt

Directions
- On medium heat, in a medium sized pan, heat coconut oil until melted.
- When melted, add onion, garlic, and sweet red pepper. Cook for 7 minutes or until caramelized.
- Now, add nutritional yeast and spiced. Except for salt.
