- 2 teaspoons extra-virgin olive oil
- 1 cup Uncle Ben's Converted rice
- 1/2 teaspoon salt
- 2 tablespoons lemon juice (fresh-squeezed, I use my frozen lemon juice)
- 2 1/4 cups chicken stock (I used a can of chicken broth with some added water)
- 3 tablespoons basil pesto (I used my Basil Pesto with Lemon from the freezer)

i didnt really like this rice. i dont know why. it would have been better without the pesto. with just the lime it was good.
