- 1 lb. turkey meat (lean)
- 1/4 cup chopped celery
- 6 green pepper (medium sized, any color)
- 1 can diced tomatoes
- 1/4 cup shredded cheddar cheese (2% milk)
- 1/2 cup cooked rice
- 1/2 Tbsp. minced garlic
- 1 tsp. cumin
- 1 tsp. onion powder
- 1 pinch salt (and pepper)

Directions
- Pre-heat oven too 400 degrees, lightly spray a cookie sheet with non-stick spray & set aside.*
- For the peppers: cut the peppers in half, removing all the core and seeds. Place the peppers face down down on the cookie sheet and roast for 20 minutes.
- In a large frying pan, add the pound of turkey meats and chopped celery.
