- 14 oz. coconut milk (from a can. Don't shake the can or stir after opening)
- 2 shallots (sliced finely)
- 1 sweet potato (large, peeled if not organic, and cut into 1/2-inch cubes)
- 2 medium zucchini (cut into 1/2-inch cubes)
- 6 spring onions (chopped, white and green parts both)
- 1/4 cup thai green curry paste (vegan)

Amazing!!! Taste is so rich and flavourful... I used some nice organic coconut milk (if that makes a difference) and added some fresh lemon juice while cooking sauce. I followed the directions and everything was cooked perfectly with these instructions. The sweet potato was perfectly soft not mushy. Great flavour. I used store bought “Thai Kitchen” green curry paste, which i was sceptical of, but it turned out delicious still.. Thai curry is always so rewarding because before you get the paste cooked and mixed it smells completely different (and not super appetizing) Once it’s cooked the end result is what I can only describe as the perfect comfort food.
I think I found my new favourite recipe.
