- 3/4 cup filtered water
- 1/2 cup raw cashews (soaked for at least 2 hours, unless you have a high-speed blender)
- 1/4 cup nutritional yeast flakes
- 1 Tbsp. apple cider vinegar
- 1 1/2 tsp. sea salt (to taste, see note*)
- freshly ground black pepper (to taste)
- 2 Tbsp. extra-virgin olive oil (plus more for greasing the pan)
- 6 cloves garlic (minced)
- 5 oz. baby spinach (Earthbound Farms Organic, or more to taste**)
- 10 oz. gluten free lasagna noodles (prepared according to package instructions***)
- 5 cups marinara sauce (store-bought, or homemade if you prefer)
- vegan Parmesan cheese (optional but recommended)

Hands down this is the best vegan recipe I ever had! I eat this yummy lasagna again!

The Alfredo sauce tasted like the real stuff and complimented the dish nicely. The only negative is that the lasagna doesn’t hold together like real cheese filled lasagna. All in all it was a great vegan dinner that I would make again.
