Description
This vegan miso soup recipe uses simple ingredients and comes together in under 20 minutes. It's better than takeout!
Ingredients

- 1 cup vegetable broth
- 3 cups water (+ more for miso)
- 5 Tbsp. miso paste (yellow)
- 2 Tbsp. hot water
- 1/2 cup mushrooms (we used maitakes, but bellas or white mushrooms work)
- 1/2 extra firm tofu (drained and cubed)
- salt (to taste)
- zucchini noodles
- nori (or seaweed snacks*)
