Nutritional yeast and cashews make for a creamy, delicious, and vegan take on mac and cheese that will have everyone coming back for seconds. Be sure to plan ahead - the cashews will need 2 to 8 hours to soak. The recipe is a Yummly original created by Sara Mellas.

  • 1 tablespoon salt (for pasta water)
  • 8 ounces raw, unsalted cashews
  • 1 1/2 cups sauerkraut (drained and firmly packed)
  • 4 1/2 cups unsweetened cashew milk
  • 1/3 cup nutritional yeast
  • 2 tablespoons olive oil
  • 6 tablespoons all-purpose flour
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon turmeric
  • 1 teaspoon salt (for sauce)
  • 1/4 teaspoon black pepper
  • 1 pound elbow macaroni
  • 4 ounces round buttery crackers (vegan, like Ritz, 4 oz. is about 36 crackers)
