- salsa (medium-heat)
- red onion
- garlic
- tomato paste
- smoked paprika
- ground cumin
- dried oregano
- 30 oz. low sodium black beans (drained and rinsed, OR 3 cups cooked, 510g)
- 1 finely diced red onion (packed cup, 160g)
- 5 large garlic cloves (extra, minced, 12g, Don't be shy, lots of flavor in garlic)
- 1 1/2 tsp. ground cumin
- 1 1/2 tsp. smoked paprika
- 1 tsp. dried oregano
- 1/2 tsp. salt
- 1/8 tsp. black pepper
- 2 1/2 cups water
- 1 cup salsa (medium-heat smooth, IF your salsa is rather chunky, PUREE it first into a smooth consistency similar to applesauce, as you need and want the liquid and flavor to spread out into the soup)
- 3 Tbsp. tomato paste
