This is a really solid recipe! First time making Borscht. I didn't follow it to a T, added more garlic (big garlic fan) and cabbage. Also had to adjust cooking time, 5 minutes longer at least if not more. Will definitely be making this again though! Thanks so much! Boyfriend and I love it.

I am not big on soups, and borscht was the furthest from my mind to ever consider eating... until I had too many beets, a cabbage and other ingredients for just this soup. “Why not, my husband my like it” were my thoughts as I started chopping.
It smelled amazing while it was cooking, I did purée the soup as I’m not big on big chunks if I do eat soup. It was delicious ! So filling too ! Husband loooves it !
This is now on the menu when I have too many beets in the fridge :)
