    It WAS easy! After the holidays I had various veggies, some pie crusts and too many eggs leftover. This was the perfect answer. I didn’t have mushrooms or spinach, but like she said, just try some different ones. Sweet peppers, cherry tomatoes, a jalapeño to spice it up, and kale filled it out. I was going to make up a salad, but had some roasted potatoes that I warmed up to go with it. My husband was very pleased.

    I tried this for Easter. I didn't modify it and it was delicious. I used leafy greens - spinach - and my kids ate it, too.

    Fantastic, easy recipe! I used turkey bacon, onion, mushroom, red pepper and garlic, and also added a few herbs (thyme, sage, and a little oregano) and it is SUPER yummy. Thank you so much!!
