- 1 medium onion (sliced or diced)
- 4 garlic cloves (peeled and smashed)
- 1 Tbsp. olive oil (for searing meat)
- 2 Tbsp. butter (for sauteing onions and garlic)
- 2 tsp. coarse sea salt (for rubbing meat)
- 2/3 cup orange juice (preferably not from concentrate)
- 3/4 cup bbq sauce (favorite, plus more for serving, Bone Suckin' Sauce is my fave)
- 1 tsp. liquid smoke (optional)
- 4 Tbsp. whiskey (or bourbon, omit if gluten free)
- 16 brioche rolls (for sandwiches)
