  • 2 pork chops
  • 2 sweet potatoes (peeled and cut into chunks)
  • 1 red onion (organic, cut into wedges)
  • 1 garlic bulb (organic, broken into unpeeled cloves)
  • 2 bay leaves (Waitrose Organic Dried)
  • 150 milliliters cider (Duchy Originals from Waitrose Organic Herefordshire Reserve Dry)
  • 2 tablespoons chutney (Duchy Originals from Waitrose Organic Harvest)
  • broccoli (Organic, or pointed cabbage, steamed, to serve)

    Directions

    1. Preheat the oven to 190ºC, gas mark 5. Place the pork chops in a small ovenproof dish with the sweet potatoes, red onion, garlic cloves and bay leaves.
    2. Pour over the cider, cover with foil and bake for 20 minutes. Remove the foil and bake for a further 30 minutes, until the pork is nicely browned and completely cooked through with no pink meat.
    3. Using a slotted spoon, lift the pork and vegetables onto 2 plates. Stir the chutney into the pan juices, spoon onto the plates and serve with steamed cabbage or broccoli. Enjoy with a glass of the remaining cider.
