- 1 Tbsp. extra virgin olive oil ({preferably organic})
- 1 shallot (chopped fine)
- 1 large garlic clove ({smashed})
- 1 handful fresh mushrooms (chopped fine {seriously, omit if you don't like mushrooms!})
- kale leaves (couple of fresh, chopped fine)
- 2 cups mozzarella cheese (grated)
- pepperoni (or other protein {if desired})
- 1/2 spaghetti sauce (a jar favorite, I used Bertolli Riserva Sauce Porcini with White Oil and my kids didn't even know they were eating mushrooms!. It was oh-so good!)
- 10 tortillas
