- 1 qt. watermelon (rind, including ½-inch of red flesh left on the rind, cut into pieces about 1-inch square, ~2 pounds; approximately half of the rind from a seedless-sized watermelon)
- 1 cup vinegar (Chang recommends rice wine vinegar; I’ve also used cider vinegar, which I like a lot, and plain white vinegar)
- 1/2 cup water
- 1 cup sugar
- 2 1/2 tsp. table salt (or 3¾ teaspoons Kosher salt, Kosher salt has more volume by weight; see Notes)
- 1 star anise
- 3 inches ginger (optional)
- 1/2 tsp. cinnamon (optional)

I just did mine today , it turned out pretty delicious, I didnt have anise so I substituted for vanilla extract 1 tsp , it is really tasty and u can eat it the same day after its chilled!! I also used mothers apple cider vinegar too for the vinegar portion

I used apple cidar vinegar, ground ginger instead of fresh, and added cherry juice. Easy and delicious.

Amazing! Had no star anise or fresh ginger, so stirred in pickled ginger from the sushi place during cooling. Also included cinnamon. Nice gingery bite, smoothed out by sugar and cinnamon. Am considering adding dried cherries to the brine. Will serve with feta, chopped apples, and arugula, topped with a nice fig balsamic.
