Chicken turned out fantastic!! The gluten free aspect is a big plus. I’d say an important part of this for us was using an oven safe grid-rack to cook it on so the chicken doesn’t soak in all the juices. You want to keep the breading dry and crispy if possible, and baking at 400 for 40 minutes kept the insides tender. Awesome recipe and packed with flavor!
