- 1/4 cup yellow onion (diced)
- 1 tsp. minced garlic
- 1 Tbsp. chili powder
- 1 tsp. ground cumin (EACH:, paprika)
- 1/4 tsp. cayenne pepper
- 1/2 tsp. oregano flakes (dried)
- 1 cup long grain rice (uncooked extra-)
- 14.5 oz. fire roasted diced tomatoes (undrained)
- 11 oz. red enchilada sauce (mild, I recommend old el paso; I've tried a few other brands and they've been too hot for the family!)
- 1 1/2 cups chicken stock
- 15 oz. black beans (drained and rinsed)
- 15 oz. corn (fire-roasted, drained)
- 4 oz. diced green chiles (mild fire-roasted, optional)
- 1 1/2 cups colby jack cheese (freshly grated)
- 2 cups shredded rotisserie chicken (prepared and)
- fine sea salt
- cracked pepper (freshly)
- 2 Tbsp. fresh lime juice (optional)
- lime wedges
- fresh cilantro
- avocado (fresh ripe)
- 1 lime juiced (and zested)
- 2 Tbsp. ranch seasoning mix (dry, I like Hidden Valley)
- 1 minced garlic (full teaspoon)
- 1 tomatillo (medium sized, husk removed and coarsely chopped)
- 1/3 cilantro (a large bunch of)
- 1/2 jalapeno (seeds removed for mild and left for spicy dressing)
- 1/2 cup mayo (full fat regular)
- 1/2 cup sour cream (fat free is great)
