- 1 lb. mushrooms (thickly sliced, I typically use a mix of shitake and crimini)
- 1 onion (large, chopped)
- 2 cloves garlic (minced)
- 12 oz. arborio rice
- 1/2 cup dry white wine
- 32 oz. chicken stock (low-sodium, room temperature)
- 1/4 cup heavy cream (room temperature)
- 2 Tbsp. crumbled gorgonzola cheese (taste and add more if a stronger flavor is preferred; this will depend on the cheese and your tastes)

Very simple, easy and delicious. I added some chicken and used portobello mushrooms instead. I didn't use gorgonzola but some bitey, tasty cheese which added some creaminess.
