- 1 packet digestive biscuits
- 75 grams butter (melted)
- 2 egg yolks
- 1/4 cup sugar
- 2 Tbsp. all purpose flour
- 2 Tbsp. cornstarch
- 1 cup milk
- 1/4 cup mango (pulp)
- 1 Tbsp. butter
- 2 Tbsp. heavy cream
- 3 mangoes (cut into strips for making a flower on top)

Directions
- Put the biscuits in a strong and clean plastic bag and crush with a rolling pin. You can use a food processor or just give it to your child to play. You will get the same results using either of these three. Transfer the crushed biscuits to a big bowl and add in the melted butter, combine with your hands. Pour the crumb batter into your tart pan and press evenly to get a smooth base; you can use the back of a spoon to do the job. Bake in the preheated oven for 7 minutes at 180* C. Once done let it cool and then keep in the fridge for an hour or so, to get the firm base.
- In a medium sized bowl whisk together the egg yolks and sugar, until pale. Sift in the flour and cornstarch. Whisk all until smooth. Add in the mango pulp and combine all. In an saucepan heat the milk, bring it to boil and remove from the heat. Now very carefully and slowly add the milk to the egg and mango mix, Whisking constantly to prevent the curdling. Pour the mix back to the saucepan and set over medium heat, Cook it but do not forget to whisk at this stage; keep moving your whisk constantly( let the doorbell or your phone ring, nothing is more important at this stage – hee hee until the mix comes to boil. Keep on low heat for about 2 minutes or until the mix thickens.
- Once done pour into a clean bowl, add in the butter – let the butter melt in – then give a quick stir to the mango custard mix. Cover the mix with a plastic wrap, making sure plastic wrap is touching the mango custard mix. Keep in the fridge to cool Take 2 tablespoons of heavy cream,in a cold bowl and whip it until stiff peak. Add the whipped cream to the cold mango custard mix, gently mix all. Let the mango cream mix cool in the fridge for some more time.
- TO ASSEMBLE EASAY MANGO TART On the biscuit base set tart pan; Pour the mango cream mix and spread it evenly. Arrange the cut mango stripes on the top making the design you like. Or just make the mango flower. Let the prepared mango tart cool before you cut in a slice. Serve with all the love you have. Let everyone treat their eyes as well as their taste buds.
