I added a half a cup of apple cider vinegar and a touch of bacon grease. Also Tony's seasonings but you could use any blended seasoning like Ms. Dash basicly add your season mix to taste. I would estimate two tablespoons. You should not add the cider all at once pour the half cup a little at a time at the end of your cook according to taste. I also use sea salt not kosher salt.
