Good. I prefer a version using almond flour but that's a personal preference.. These are also very soft, which I do not like BUT
For me... these spread right out on the sheet...sugar sub type? don't know. But they are sort of like a piece of lemon pie and that's ok... so I'm keeping the recipe. Kent likes them quite a bit. Keep stored in refrig, for SURE.
