- 3 lb. boneless beef bottom round roast
- salt (to taste)
- black pepper (to taste)
- 2 Tbsp. extra virgin olive oil
- 1 Tbsp. Italian herb seasoning
- 2 tsp. garlic powder

Directions
- Remove beef from refrigerator and season liberally on all sides with the salt and black pepper. Allow beef to stand at room temperature for 30 minutes before roasting.
- Preheat the oven to 400°F.
- Line a roasting pan with aluminum foil and position a roasting rack inside.

Was fantastic! Should’ve pulled it out few minutes earlier but was still tender and flavorful

tasted great and was easy to put together. but had to pull out 30 min early cause it was already to temp. Glad keot checking it or ut wouldve been very over cooked and dry

Easy to prepare - simple ingredients and simple steps. Turned out well. Might also use different cut of beef; came out a little tough. Instead of oven, used Traeger grill with hickory chips.

The roast was real tough. If I make it again, I'll have to use different kind of roast; maybe eye round.

I loved it! Mine turned out a but dry because i didn't have a thermometer but it was really goo.
