- 2 eggs (plus 1 egg yolk)
- 1 tsp. vanilla extract

- 1/2 tsp. baking soda
- 1/8 tsp. nutmeg (I like a stronger nutmeg flavor, which is essential to homemade doughnuts, so I use ½ tsp. Use ¼ tsp if you prefer a lighter flavor)
- 1/2 tsp. salt
- 1/2 cup cake flour (or you may use all-purpose flour, spooned and leveled)
- 3/4 cup buttermilk
- 6 cups canola oil

- 1/2 cup powdered sugar
- 2 tsp. corn syrup
- 1 tsp. vanilla
- 1/3 cup hot water
