Directions
- Preheat the oven to 350°F.
- Spoon about half a can of the enchilada sauce into the bottom of a 9x13-inch baking dish. Set aside. Reserve the remaining sauce for a later step.
- Finely chop the yellow onion and bell pepper. Remove seeds from the jalapeño and finely dice. Mince the garlic.

These were super quick to make, given that your throwing the tortillas in microwave. This is just a personal preference I guess to slightly fry the tortillas prior to quick dipping in enchilada sauce before adding in whatever filling meat or meatless. This prevents the enchilada in my opinion fromb becoming to soggy and slightly dry. But of coarse addition of frying calls for added unhealthy version..But if your trying for quickness and dont mind all that then.. these were great im this regard.

Would make it again, but kick up the spice. I also had to make my own enchilada sauce and had to sub some ingredients. I also used soft tortillas so it was very mushy.

Easy and delicious! I didn’t add jalapeños or garlic, but I did add a couple of extra spices and it turned out fantastic! I am a very beginner cook, but this recipe was so easy to follow and my husband loved it

I made it as the recipe stated however I wish I would’ve gotten more enchilada sauce put in the meat

These were super fun and easy to make! One thing I did was add a splash of Valentina hot sauce to the beef mix and a little extra garlic! My partner and I loved it!

Used only 1 can of enchilada sauce- used Hatch brand to make them gluten free. The kids rated it 5 stars. 🌟 Thats a win!

Full of flavor left the enchilada sauce out of the filling perfect amount of heat with it in the bottom of the dish and on top will make this over and over again

Pretty freaking tasty! My kids and boyfriend loved it ! I personally didn’t care for the cilantra stuff on top lol (but I could’ve added too much) as well I added just a little more seasoning and enchilada sauce 😇 dinner served perfectly with a ball of Spanish rice 🍚 🙏
