If you're looking for a new way to use ground beef, look no further than these easy, filling red sauce enchiladas. The whole family is sure to love them!


  • 1 can red enchilada sauce (10 oz. per can, for bottom of dish and filling)
  • 1/2 yellow onion (medium)
  • 1 bell pepper (medium)
  • 1 jalapeño pepper (small)
  • 2 cloves garlic
  • 1 1/2 teaspoons extra virgin olive oil
  • 12 ounces 85% lean ground beef
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded Mexican style cheese (for filling)
  • 12 soft corn tortillas (6-inch diameter)
  • 1 can red enchilada sauce (10 oz. per can, for top of dish)
  • 1 cup shredded Mexican style cheese (for top of dish)
  • cilantro (finely chopped, optional, for garnish)

    Pretty freaking tasty! My kids and boyfriend loved it ! I personally didn’t care for the cilantra stuff on top lol (but I could’ve added too much) as well I added just a little more seasoning and enchilada sauce 😇 dinner served perfectly with a ball of Spanish rice 🍚 🙏

    It turned out yummy.
    Delicious, the whole family loved it, very easy to make and came out perfectly with no adjustements to anything (except I had double the meat so I doubled everything else, had some stuffing left over so added it to the baking dish). My neighbor also loved it and said the spice mixture was perfect. Definitely making again!!

    it was good. next time ill hold back on adding 2 cloves of garlic to just 1. it was pretty strong and took away the taste of the beef onions and peppers.

    Didn't have some of the listed ingredients. Easily substituted in spinach, whole wheat tortillas and my own cheese mixture. Turned out great!

    Love this, it was so easy to follow. I added rice, beans and corn into mine and topped with some black olives.
